Baked Chicken Drumsticks

Ingredients:

  • Salt & Pepper to taste
  • 3 – Tablespoons Olive Oil
  • 1 – teaspoon Baking Powder
  • 1 – Tablespoon Brown Sugar
  • 2 – teaspoons Smoked Paprika
  • 2 – teaspoons Garlic Powder
  • 1 – teaspoon Onion Powder
  • 1/2 – teaspoon Chili Powder
  • 7-8 – Chicken Drumsticks

Equipment:

  • Plastic Cutting Board
  • 1 Large Prep Bowl (for chicken)
  • 1 Small Prep Bowl (for dry rub)
  • Baking Tray with Rack

Step-by-step:

  1. Salt & Pepper – Salt and pepper the chicken drumsticks with an assembly line approach. From package to cutting board, then to a large prep bowl after covering with plenty of salt and pepper. 
  2. Oil & Dry Rub – with the chicken in the prep bowl apply a liberal amount of olive oil. Then repeat the assembly line approach to coat the chicken with dry rub, while keeping a wet and dry hand. The flow goes from the prep bowl to the cutting board and then to the backing rack. I point the meaty part of the stick to the outside of the rack.
  3. Bake at 350°F – Bake the drumsticks for 40-50 minutes or until chicken is done. Some might want to rotate the chicken throughout the cooking process, however I skip this step to save the effort and preserve the crust on the skin.
